Taco Soup

Taco Soup

Ingredients:
2 pounds ground beef (I season with garlic salt)
1 large onion, chopped (sometimes I used dehydrated)
1 large can pinto beans, drained & rinsed
1 can whole kernel corn, drained
1 large can stewed tomatoes - mexican style (I used one quart of home canned tomatoes)
1 can (10 oz.) Rotel - diced tomatoes & green chilies - mild
1 can (10 oz.) Rotel - Mexican lime & cilantro
1 pkg. taco seasoning mix (I have also used 2 tsp. of chili powder)
1 pkg. original hidden valley ranch dressing - dry
2 1/2 cups water or more, to make soup broth

Preparation:
Brown ground beef and onions in a large pan, drain off fat.
Add remaining ingredients and simmer for an hour or so.
When ready, serve in big soup bowls, and have a skillet of hot cornbread to eat, too.

Add ons:
cheese
sour cream
cilantro
