Wedding Dinner


Ingredients:
1 12- 16 oz. Polish Sausage (Beef Kielbasa, Turkey, or any type)
3-4 potatoes
6-8 carrots or more (there never seem to be enough carrots)
1 small onion
3-4 Tbsp. Olive Oil
1-2 Tbsp. Italian seasoning
salt and pepper to taste

Directions:
Preheat over to 350 or 375

Combine in large bowl:
Polish sausage (sliced 1/3 inch thick)
potatoes (pealed and cut into cubes)
carrots (pealed and cut - I do "buttons")
onion (chopped)

Drizzle and stir and add:
olive oil over the mixture and toss to coat vegetables
then add the Italian seasoning, salt, & pepper and mix in

Cook:
Pour mixture into a casserole dish or a 9"x13" glass pan
Spread evenly
Cover with foil

Bake for about 45-60 minutes (until vegetables are soft)
Stir about 1/2 way through bake time
