Greek Bean Pitas

Greek Bean Pitas 



Ingredients:  (serves 6)
1 (15oz.) can white beans
1 1/2 cups diced cucumber (I like to remove the seeds)
1 cup diced tomatoes
1/2 cup diced red bell pepper
1/2 cup crumbled Feta cheese
1/3 cup diced red onion
1/4 cup black olives, chopped (I omit this- or serve on the side)
2 Tablespoons red wine vinegar (I substitute 1 T. Apple Cider Vinegar & 1 T. Italian dressing)
1 1/2 teaspoons dried oregano
salt & pepper to taste
6 whole wheat pitas
6 lettuce leaves

Instructions:
Combine all ingredients except pitas and lettuce in a bowl (may be made several hours in advance).
Place lettuce leaves on top of flat pita.
Spoon filling in the middle.
Roll up sides o pita with bottom of pita smaller than the top.
