Ugly Chicken Soup
Part One:
Boil "ugly" chicken (necks, backs, etc) in two qts (or more) of water.
Remove & debone.
Cook small chunks of carrots & potato in chicken water.
Add rice (enough to make thick).
Add back in chicken.
Part Two:
Brown onions in butter.
Add
two cans cream of chicken soup
two cans cream of mushroom soup
two cans of milk and 2 tablespoons A1 Steak Sauce
Add 1/2 lb of sharp cheddar cheese to above
Warm until Melted
Do not allow to boil from this point on. Soup burns easy because of cheese.
When part one is done (thick & veggies tender), add part two. Keep warm until ready to serve. You can do part one a day or two ahead.
So.....that's Mom's recipe. I have just used chicken broth and leftover chicken meat (or turkey) instead of doing the whole chicken thing. I even made the soup once and forgot to add the chicken and it was still very tasty and no one noticed.
