Baked Dill Salmon on Rice!
Ingredients:
1 Tablespoon olive oil
1 large onion, chopped
4 cloves garlic, pressed
1 15-oz. can diced tomatoes, drained (I use petite cut)
12 ounces mushrooms, sliced
juice of 2 lemons (about 4 Tablespoons)
4 1/2 Tablespoons fresh dill weed, chopped
salt & pepper to taste
6 salmon fillets
3 cups cooked brown rice (I don't normally serve it over rice)
Cooking Instructions:
Preheat oven to 350 degrees. Place salmon in a greased baking dish. Bake, uncovered, for 15 minutes, or until salmon flakes with a fork.
While the salmon is cooking, heat olive oil in a large skillet, over medium heat; add the onion and garlic and saute' for 2 minutes. Then add mushrooms and tomatoes to the skillet and saute' for another 5 minutes. To the vegetable mixture, add the lemon juice and dill. Remove skillet from heat and set aside.
Salt and pepper salmon to taste. Make a bed of rice o teach plate and top each with a salmon fillet. Spoon vegetable mixture evenly over salmon fillets, covering each fillet and serve.
