Black Bean Soup

Black Bean Soup


Boil 3-4 chicken breasts (cut up) and set aside

Cook the following over medium heat until onion is limp (I do it in the pot I will make the soup in):

4 Tbsp. olive oil
2 med. onions chopped
2 med. green peppers chopped
3 cloves garlic

Add the following and bring to a boil then simmer for 30 minutes:

3+ cups of water
4 bouillon cubes (I use chicken)

Add the following and heat through:

1 1/2 tsp. found cumin
1 1/2 tsp. oregano
2 Tbsp. vinegar
6 cups cooked and drained black beans
the cooked chicken

Serve over rice.
You may want to serve with corn bread, too.
