Shrimp and Orzo

Shrimp & Orzo


Ingredients: (serves 6)
1 1/2 cups orzo pasta, uncooked
3 Tablespoons olive oil, divided
salt and pepper to taste
1 1/2 pounds shrimp, peeled and de-veined
1 large onion, chopped
3 cloves garlic, pressed
1/3 teaspoon red pepper flakes
3 cups cherry tomatoes
1/2 cup Parmesan cheese, grated
1/2 cup fresh basil, chopped

Directions:
Cook orzo pasta according to package directions.  Drain & set aside.

Season shrimp with salt and pepper
In large skillet over medium-high heat, saute' shrimp in 1 1/2 T. olive oil until they turn bring pink.
Remove shrimp from skillet and set aside.

Add remaining oil to skillet and saute' onions, garlic, and red pepper flakes together until onions are translucent.
Add tomatoes and cook another 2 or 3 minutes.

Stir in pasta and shrimp.  Continue to cook until all is heated through.

Remove from heat; stir in cheese and basil.

Serve
